Pumpkin Energy Bites

These energy bites are high in heart healthy fats and protein. These are great for hiking or a high calorie snack if you need to gain weight.

Ingredients:
1 cup oats
2 Tbsp Chia Seeds
1/2 tsp All Spice
1/4 tsp salt
1/2 cup pumpkin
1/2 cup peanut butter
1 Banana
1/4 cups sweetened coconut

  1. Mix together dry ingredients in a food processor
  2. Add banana, pumpkin, peanut butter and mix
  3. Shape into bite size balls
  4. Dust with sweetened coconut
  5. Cover and refrigerate
