Oat and Coconut Breakfast Bars

Breakfast Bars are a quick and easy way to have a healthy breakfast on the go! Freeze these bars on a cookie sheet and then cut into bars and freeze to use all week. A ready to go healthy breakfast is an easy way to meet your nutrition and wellness goals!


  • 1 1/2 cup oats
  • 1 cup cooked millet
  • 1 cup dates
  • 1 banana
  • 1 egg
  • 3/4 cup coconut, sweetened
  • 2 Tbsp sesame seeds
  • 2 Tbsp nut butter
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp salt

  1. Preheat oven to 325 degrees. Lightly oil 8×8 inch baking pan
  2. Cook millet per package instructions.
  3. Mix dry ingredients.
  4. Pulse dates and banana in a food processor until a paste forms.
  5. Add banana and dates to dry ingredients.
  6. Mix in egg and vanilla.
  7. Mix in cooked millet.
  8. Pour mixture into prepared baking dish.
  9. Bake for 25-35 minutes.
  10. Cool for 10 minutes and cut into 9 bars.
  11. Enjoy!
