Ingredients:

1 sweet potato, diced

1 medium yellow onion, diced

8 white mushrooms, diced

2-3 cups chopped spinach

4 eggs

1/2 cup milk

1/3 cup parmesan cheese

1 Tbsp olive oil

2 tsp smoked paprika
-
1/2 tsp fresh ground pepper
Directions:
1. Preheat oven to 400 degrees
2. Chop potato, onion and mushrooms
3. Add olive oil, pepper and 1 tsp of smoked paprika to vegetables and stir
4. Roast in a roasting pan for 20 minutes
5. Chop spinach
6. Add spinach to roasted vegetables after they have cooked
7. Whisk 4 eggs and milk
8. Add whisked eggs to roasted vegetables
9. Top with parmesan cheese and remaining teaspoon of smoked paprika
10. Roast for an additional 20 minutes
11. Cut into 6-8 servings
