My husband and I love to make ceviche especially when we are on vacation. Ceviche is a fun way to eat fruits and vegetables. My husband recently started making ceviche with mango which is delicious!
Ingredients:
¾ to 1-pound fresh Ahi
1 mango or 1 cup diced mango
1 small green pepper
1 jalapeño
3 Roma tomatoes
¼ of an onion
2 tbsp chopped cilantro
2-4 limes
Salt and pepper to taste
Directions
1. Dice Ahi into even ½ inch pieces
2. Squeeze 2-4 limes over Ahi until it is coated evenly
3. Stir frequently and refrigerate until cooked. Ahi is cooked when it changes color and is a firm, cooked texture
4. While Ahi is cooking dice all vegetables and mango
5. Drain lime juice off of Ahi
6. Mix together Ahi, vegetables, mango and cilantro
7. Salt and Pepper to taste
8. Refrigerate to let the flavors meld
9. Serve with home made chips or on a tortilla
