When I am consulting with clients and worksites I always try to discuss easy and affordable ways to eat healthier meals. Millet is an affordable way to eat whole grains! This salad is all made in the rice cooker! Super easy and fast!
Ingredients:
- 1 1/2 cups raw millet
- 3 cups water
- 2 stalks green onions, chopped
- 1/4 cup fresh parsley, chopped
- 6 radishes, thinly sliced
- 1 bunch asparagus, cut into 1″ pieces
- 3 tbsp lemon juice
- 2 tbsp olive oil
- 1 tsp garlic, minced
- 2 tbsp dijon mustard
- 1/2 tsp salt
pepper to taste

Directions:
1. Put millet and water into rice cooker and cook
for about 30 minutes
2. Chop vegetables while millet is cooking
3. Whisk together lemon juice, oil, garlic, mustard,
salt and pepper
4. During the last 5-6 minutes of cooking add
asparagus to vegetable steamer on rice cooker or
steam in a separate pan, should be tender but firm
5. Add asparagus to millet
6. Add remaining chopped vegetables to millet
7. Mix in whisked dressing
8. Mix ingredients until combined
9. Enjoy!
