I have really been into sesame oil and using peanuts in recipes lately! This is a really tasty coleslaw recipe. I love it! I ate several cups in one sitting!
Here are the ingredients:
- 1/2 purple cabbage, shredded
- 1/2 green cabbage, shredded
- 1 tsp salt
- 1/2 sweet onion, julienned
- 3 carrots, shredded
- 1/2 cup cilantro, chopped
- Top with ½ cup peanuts
Dressing:
- 2 tsp Garlic
- 2 Tbsp Sesame Oil
- 2 Tbsp Lime Juice
- 1 Tbsp Soy Sauce
Directions:
- Mix together purple and green cabbage
- Add salt and massage into cabbage. This step is optional. It helps to soften the cabbage
- Mix in onion, carrots and cilantro
- Whisk dressing ingredients
- Toss salad with dressing
- Top with peanuts
- Enjoy!
